This is actually a huge debate amount nutritionists and scientists.
Canola oil has some pretty scary things said about it, do some reading on a general internet search. I actually cut canola oil out of my diet a number of years ago.
';Healthier'; is a subjective term. I take the stance that varying what I eat is really important and I use different oils for different types of cooking. For everyday sauteeing, my preference is a good quality olive oil. For deep frying and stir frying, I like peanut oil because of the high smoking point. For heating tortillas, I like corn oil just like they use at my favoirte taqueria. For baking sweets like quick breads and muffins, I use nut oils like almond, hazelnut, walnut, etc. Each of these oils have thier own balance of nutrients as well as thier own flavor, which I take advantage of to broaden my nutrient base as well as enhance my cooking.What is the healthier to cook with vegetable or canola oil?

Canola oil is the healthiest but extra virgin olive oil is awesome and tastier in cooking.
Between the two canola oil is best. Olive oil is the only way to go though.
Canola oil is made from Genetically modified organisms. It's probably best to avoid eating it. (works great to lubricate meat slicers though) Vegetable oil is good to cook with (heat) but peanut oil is better. It is also best to save your olive oil for cold dishes or as a garnish added after cooking, it doesn't respond to heat well. Please never cook (heat) extra virgin oilve oil (it is such a waste) use a clearer (more yellow color than green) olive oil if you must heat it.

Olive oil IMO is the best. It's more expensive, but from what I know, it is the healthiest and tastiest.
Olive OIl. Although it's a bit expansive and also if you can, try to use less oil than it will be more healthier.
