My seasonings always ended up being dry and tasteless too. I started putting a little oil or water in a dish with the seasonings and letting it soak for awhile to soften up. Then let the chicken marinate in this for a few minutes and cook. The oil or water doesn't make it taste any different.

Try cutting yoru breast in half across, to make a large, very thin breast. Then season both sides. You won't have to grill it as long to cook it thoroughly and your spices shouldnt' get wonky that way.
