Canola is oil acquired from a genetically engineered version of the rapeseed plant (';rapum'; is the latin word for ';turnip';) originally developed in Canada. For marketing purposes the name Canola was used and was derived from ';Canadian oil, low acid.';
You can basically say that Canola oil is a genetically engineered type of Vegetable oil.
Canola oil is supposed to be for general cooking and sellers claim that it is the healthiest oil -- this been a matter of some controversy and the issue has been confused by some hoaxes. First link in sources is an article on Canola oil.
Corn oil is extracted from corn germ.
The strength of corn oil is in frying because it has a high smoke point, in other words it can get very hot before it starts to break down.
Corn oil is also used in biodiesels and it has a host of other industrial uses. You can find some of these uses listed in the second source link.
Vegetable oils are oils taken from plants rich in triglycerides but accordingn to a wikipedia article oilseed plants are generally used. (Canola oil comes from a genetically engineered type of rapeseed plant. Rapeseed plants are a type of oilseed plant.)
There are a great many vegetable oils with different properties -- this includes rice bran oil, canola oil, sunflower oil, peanut oil, etc. These oils differe in:
texture (effecting how much lubrication they do)
flavor (taste)
flavor base (ability to carry flavor of other ingredients)
These different properties are good for different types of cooking and types of food.
Not all vegetable oils are edible -- many are used for industrial purposes such as biodiesel fuels.
