Generally, I just use whatever oil I have on hand. I always use olive oil so that's what I also use for the pancakes. Or, you can melt butter in the microwave before adding it to the mixture.Cooking substitute for vegetable oil?
you can substitute applesause most of the time in recipes that call for veg. oil.
Just leave the oil out.

They will be fine.
Melt some margarine or butter.
Do you have applesauce, or butter, or lard, any of these will work.
in the batter you can replace the oil with applesauce
Melted butter or margarine .. or you can skip it all together. It wont be as fluffy, but it will be just as tasty without the added fat!
canola oil, butter or margarine are all pretty ~.
try adding melted butter or shortening
